Almond Marzipan

Ingredients

  • 60g caster sugar

  • 60g demerara sugar

  • 70g grape seeds oil

  • 120g ground almond

  • 40g apple puree

  • 30g flour

  • 10g cornflour

Method

  1. Mix all ingredients with a spatula and set aside.


Sweet Challah Dough

Ingredients

  • 500g flour

  • 75g soft coconut butter

  • 10g dry yeast

  • 10g salt

  • 50g sugar

  • 220g water

METHOD

  1. Place all dry ingredients in a mixer bowl.

  2. Start kneading on a small speed and add the water gradually. Continue to knead for 8 minutes.

  3. Cover the mixer bowl with a towel and prove till it doubles in size.

  4. Divide the dough to 6 pieces.

  5. Roll each piece to a long strip (width approx 8 cm)

  6. In the middle of each strip place a roll of marzipan (60gr) and sprinkle the top with red fruit and basil.

  7. Fold the strips and braid.

  8. Prove it till it doubles in size and bake at 160c for 40 min
