Ingredients
4-3 very ripe bananas (up to 250-300 grams total)
1/2 to 3/4 cup sugar
3/4 cup grapeseed oil (or any vegetable oil you like)
2 cups of flour
Teaspoon and a half of baking powder
Half a teaspoon of baking soda
A pinch of salt
A spoon of cinnamon
2 tablespoons of maple syrup - to pour over the cake after it comes out of the oven.
Optional Toppings
Inside the cake: about 1/2 cup chocolate chips or chopped dark chocolate, blueberries or raisins.
Over the cake: a cup of walnuts / chopped pecans / more chocolate / sliced almonds
Method
In a bowl, mash ripe bananas (possibly with a fork). Add sugar, cinnamon and oil. Mix everything well together.
Transfer the batter to a pan. Bake in a preheated oven at 180 degrees for about 25-35 minutes or until the skewer comes out clean-moist (but not mushy). The cake should be cooled outside the oven before slicing.
